【ケニーノ赤峰のおうち居酒屋食堂】vol.35 トマト麻婆豆腐

麻婆豆腐といえば、大人も子どもも大好きな中華の大定番メニュー。今回は、これを家庭で作る際に「おっ!」と思わせる隠し味を取り入れた、 大人の麻婆豆腐レシピをご紹介。

ひき肉や長ネギ、玉ねぎ、しょうがといった基本食材に、豆板醤や鶏がらスープなどの中華調味料などはそのままだが、ここでポイントとなる食材が椎茸とトマトだ。細かく刻んだ椎茸は出汁的なエキスとして味に深みを加え、またざっくり切ったトマトは炒めることで酸味と甘みが加わり、絶妙なコクを引き出す。

豆腐は、つるんとした食感がお好みの方は絹ごし、しっかりした食感がお好みの方は木綿でトライしてみよう。仕上げには山椒をかけてさらにピリッと辛めにいくのもアリ。肌寒くなってきた秋の夜、熱燗や紹興酒のお供にいかがでしょうか。
