今回は、旬の鰹を使ったおつまみをご紹介。刺身やたたきのままでももちろん美味しいが、ひととおり素の美味しさを味わったら、次は簡単アレンジ「なめろう」に挑戦しよう。

「なめろう」は、房総半島発祥の郷土料理。アジやサンマなどの青魚を獲ったあとに漁船で捌き、味付けの薬味を混ぜて粘り気が出るまでまな板の上で叩いたもの。盛った皿をなめるほど美味だったので、なめろうという名になったという説もある。

今回は初鰹で身がサッパリしているので、味付けは味噌や醤油の他にマヨネーズも少々。これが秋の戻り鰹の場合は、脂が乗っているのでマヨネーズはなくてもOKだ。2倍楽しむなら、作ったなめろうのうち半分は、オーブントースターで焼いて「さんが焼き」にしても美味しい。冷酒がぐいぐいすすむおつまみ2種、早速今夜の晩酌にいかがでしょう?
