2.材料を切る
大根は皮を剥き、いちょう切りに。人参は皮を剥き、輪切りに。玉ねぎは5ミリの薄切りに。ごぼうは斜め薄切りにし、水にさらす。長ネギは1cmの輪切りと薬味用に小口切りに。椎茸は軸を取り、薄切りに。油揚げは1cm巾に切る。こんにゃくは5ミリ厚の短冊切りにし、塩揉みし、3分ほど茹でる。

【ケニーノ赤峰のおうち居酒屋食堂】vol.41 粕汁

朝晩はかなり「冷え」を感じるようになってきた今日この頃。自然と、温かな食べ物が恋しくなってくる。

そこで今回は、一気に体を温めることができる「粕汁」をご紹介。具材は豚汁と似ているが、「酒粕」を投入するのがポイントだ。この酒粕には、ビタミン類、炭水化物、アミノ酸等が豊富に含まれていて体を温める効果があるといわれている。冬の行事や炊き出しなどに出されることが多いのは、そういった理由があるのだ。

具沢山にする場合は材料を切る手間も増えるが、材料の増減はお好みと時間で適宜調整できるし、あとは基本調味料に酒粕を入れれば美味しく仕上げられるという手軽さがいい。日本酒の熱燗との相性も抜群なので、寒い日には是非お試しあれ!
