今回は、本連載でも何度も登場してきた「塩豚」を使った一品をご紹介。豚肉の塊肉を塩豚にしてから蒸し、そこにニラだれをかけた「蒸し豚のニラだれがけ」だ。豚を煮るよりも蒸したほうはかたくなりなすぎず、ぷりぷりとした食感に仕上がるのがポイントだ。

塩豚は、一晩寝かせて熟成させるとより美味しく仕上がるので、今晩のうちから仕込んでおけば明日以降の夕飯のネタになるので便利。ソースとなる「ニラだれ」は、茹で野菜や冷奴、納豆やうどん、唐揚げまでいろいろなメニューにかけても美味なので、多めに作っておいて是非いろいろなアレンジを楽しんでみよう。
