7. 軽く炒めたら水4カップを入れ油揚げも入れる。煮立ってきたら灰汁を取り、顆粒出汁小さじ1、酒大さじ2、みりん大さじ1、塩小さじ1で味付けし、蓋を少しずらして10分煮る。味見をし、足りなければ塩を足す。オクラも入れ1〜2分煮たら完成。
